Rainy Day Pancakes
There is nothing better than waking up in the morning and smelling the goodness that is pancakes. Pancakes are so easy to make, and they make possible for us to be eating ice-cream at 8 o’clock in the morning (don’t say you haven’t been there!).
Our favourite way of eating pancakes is with bacon, banana and maple syrup. It might seem like a weird combination but it SO works. The combination of sweet and salty is breakfast heaven! The must have ingredient is Maple Syrup…delicious. You can get very fancy with pancakes, but all you need is a simple recipe to get started and then the opportunities are endless.
1 1/2 cups of milk
2 cups of self-raising flour
25g butter melted
Sift flour into bowl then add milk and egg. Whisk until batter is all mixed through and has no lumps. The mixture should be fairly thick, not too runny.
Melt butter in fry pan (Tip: make sure the fry pan is not on full heat because the pancakes tend to burn whilst being uncooked in the middle. Moderate heat is perfect).
Place about a ladle full of pancake mixture into the frypan. Cook until bubbles appear on surface about 2-3 minutes, then flip. Once turned cook for about 1 minute, or until golden.
Then eat and enjoy x
