Pumpkin Soup
Pumpkin Soup… a soul warming and universal winter staple. Simple, delicious and nutritious.
What you’ll need:
1kg Pumpkin, skin removed and roughly chopped
1 small orange sweet potato, peeled and roughly chopped (I use this make the soup creamier instead of adding butter or cream, of course butter or cream can be added after blending if preferred)
1 large brown onion diced
1 large clove of garlic crushed
1 Litre of chicken stock
Salt and Pepper to taste
a dash of EVOO
Sour Cream to serve
Where to start-
Heat your Oil in a pot and cook the onion and garlic until translucent. Add pumpkin and sweet potato and fry for about a minute mixing well.
Add chicken stock, bring to the boil then turn the heat down to a slow simmer. Continue cooking until vegetables are tender then remove from the heat.
Once slightly cooled, blend with a stick blender (or similar) until desired consistency has been met. Serve hot with a dollop of sour cream, chopped fresh herbs and some fresh bread.
note- If you don’t have a blender, chop your onions very small and use a potato masher to blend.
